A very special version of our most loved and known cheese. The fresh and savoury taste of sheep milk cheese goes well with the precious and intense one of truffle. It is a young cheese, which matures for just 20-25 days and it is made only from whole sheep milk. The rind is dark yellow, with the stripes of canestrati cheeses. The paste is cream-coloured, dotted and darker in colour because of the pieces of truffle and with slight holes.
It has a fresh and creamy consistency, the scent that combines the aroma of truffle with that of milk. The taste is balanced and persistent, with the intense note of the truffle sweetened by the notes of the cheese. It is a very special touch for snacks during an aperitif or for appetizers, and it can be a magnificent ending to a dinner, by itself or accompanied by homemade bread or fragrant baked goods.
